Sometimes people ask me for a more savoury nut; here is my response. I chose to use a rich meaty nut. Most people find it bitter, not in this case. The combined mixture of grape and Roma tomatoes, along with locally-grown habaneros and seaweed, for that hint of the ocean and salt, give it is savoury taste. Toss in olive oil pasta and you’ve transported your dinner table to the Mediterranean.
